Creamy Tomato Bisque
Hello friends!! I have an amaaaaaazing recipe for you tonight! This warm, hearty, filling, healthy, veggie-loaded, delicious, thick, creamy, wonderment of a soup is my new fave thing. Probably because I LOVE tomato soups! The thing is, the creamy kinds of soups (AKA the best kinds) are usually made with heavy cream. Therefore, they are usually full of fat, which means I can have them in moderation. But I wanted to find a variation of my fave comfort food, so that I didn’t need to eat it in moderation.
So, that‘s exactly what I created with this recipe!
Ingredients:
1 onion, chopped
2 cups shredded carrots
3 cloves garlic, minced
1 tbs olive oil
4 bay leaves
7 cups diced tomatoes
2 cups vegetable broth
2 tsp brown sugar
2 tbs basil
2 tbs oregano
Garlic salt
Pepper
1½ cups plain non-fat Greek yogurt
Method:
- In a large pot, heat onion, carrots, garlic, olive oil and bay leaves over medium heat for approximately five minutes or until cooked through.
- Remove the bay leaves from the pot and stir in diced tomatoes and vegetable broth.
- Add brown sugar, basil and oregano and simmer on low for about five minutes, stirring constantly.
- Pour into a blender or food processor and puree.
- Return to pot and stir in yogurt until combined.
- Season with garlic salt and pepper to taste!
Tip: I also typically add more basil and oregano as well because I LOVE spices, so feel free to play with it!
